Recipe: Masala Chai Sugar Cookies

These soft and chewy masala chai sugar cookies are the perfect treat on chilly days, and pair perfectly with a hot cup of tea. The masala chai spices, including cinnamon, cardamom and black pepper, as well as the orange pekoe tea base, give these cookies a delicious, rich spiced flavour. However, they are sweet enough to be enjoyed by the whole family. 

To make these, you can use our loose leaf Masala Chai, or open up a couple Masala Chai tea bags. You'll need a spice grinder (or coffee grinder) or a mortal and pestle to grind up the tea into a fine powder.

 Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons ground Jolene's Masala Chai Tea
  • 1 3/4 cups white sugar
  • 1 cup unsalted butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper; set aside.
  2. In a large bowl, sift together flour, baking soda, baking powder and salt. Set aside.
  3. Grind Masala Chai tea with a spice grinder, coffee grinder or mortar and pestle into a fine powder.
  4. Combine ground masala chai tea with sugar. 
  5. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, beat the butter and sugar-tea mixture until light and fluffy, about 3 minutes.
  6. Beat in egg and vanilla extract, combine until fully incorporated.
  7. Slowly blend in dry ingredients mixing until just combined.
  8. Roll dough until about 1/4 inch think, and use a cookie cutter to cut out cookie shapes. Place on baking sheet 1 inch apart.
  9. Bake in preheated oven for 8 to 10 minutes.
  10. Let stand on baking sheet two minutes before removing to cool on wire racks.
  11. Make a cup of tea and enjoy with a cookie. 😊
