1.Matcha Cookie & White Chocolate :
Ingredients (for 10 cookies) :
- 150 g of flour
- 1 tablespoon of matcha
- 1/2 teaspoon of baking soda
- 80 g of softened butter
- 100 g of brown sugar
- 1 egg
- 80 g of white chocolate, chopped into pieces
Instructions :
- Preheat the oven to 350°F.
- Mix the flour, matcha, and baking soda.
- In another bowl, whisk the butter and sugar until creamy. Add the egg.
- Gradually incorporate the dry ingredients, then fold in the white chocolate.
- Shape into small balls and place them on a baking sheet.
- Bake for 10-12 minutes until they are golden around the edges.
2. No-Bake Matcha & Coconut Cheesecake
Ingredients (for 4 servings):
- 150 g of cookies (speculoos or shortbread type)
- 50 g of melted butter
- 200 g of cream cheese (Philadelphia or mascarpone)
- 100 ml of coconut milk
- 2 tablespoons of sugar
- 1 tablespoon of matcha
- 1 sheet of gelatin
Instructions:
- Crush the cookies and mix them with the melted butter.
- Line a mold and set it aside in the fridge.
- Soak the gelatin in cold water until softened.
- Heat the coconut milk and dissolve the gelatin in it.
- Whip the cream cheese with the sugar and matcha, then add the warmed coconut milk.
- Pour over the cookie base and let it set in the fridge for at least 3 hours.
3.Soft Matcha & Almond Muffins
Ingredients (for 6 muffins):
- 150 g all-purpose flour
- 1 tablespoon matcha
- 1 teaspoon baking powder
- 50 g almond flour
- 80 g sugar
- 1 egg
- 100 ml milk (plant-based or regular)
- 60 g melted butter
- 1 teaspoon vanilla extract
- A handful of sliced almonds for decoration
Instruction:
- Preheat your oven to 350°F.
- In a bowl, mix together the flour, matcha, baking powder, and almond flour.
- In another bowl, beat the egg with the sugar, then add the milk, melted butter, and vanilla.
- Gradually incorporate the dry ingredients into the wet mixture. Stir until you achieve a smooth batter.
- Divide the batter into muffin molds and sprinkle with sliced almonds.
- Bake for about 15-20 minutes, until golden and a toothpick comes out clean.
- Let cool before enjoying.
4.Ice Matcha Latte Recipe 🍵❄️
Ingredients:
- 1 teaspoon of matcha powder
- 100 ml of hot water (not boiling, about 80°C)
- 200 ml of milk (plant-based or dairy, according to your preference)
- 1 teaspoon of maple syrup, honey, or sugar (optional)
- Ice cubes
Preparation:
1. Prepare the matcha:
- In a bowl, sift the matcha powder to avoid clumps.
- Add the hot water and whisk vigorously with a chasen (bamboo whisk) or a milk frother until you achieve a smooth and frothy texture.
2. Assemble the iced latte:
- Fill a glass with ice cubes.
- Pour the milk over the ice.
- Then, gently add the prepared matcha, pouring it slowly for a beautiful layered effect.
- Sweeten to your liking and stir before enjoying.
